The Chef of the Restaurant il Cigno, Andrea Castelli, graduated from the well known Scuola Alberghiera di Lavagna has also attended specialization classes in the most renowned Culinary schools of Italy such as: Cast Alimenti di Brescia, Metro Accademy di Milano, Scuola Della Giovanna, Europa Chef Accademy (with important “maestri” as Pier Giorgio Giorilli, Raimondo Mendolia, Paolo Cappuccio, Claudio Sadler, Walter Zanoni, Stefano Laghi).
Among his tasks there is also a specialization on food intollerance such as the gluten-free cuisine for celiacs.
Mainly specialized on fish the gourmet cuisine of the Restaurant Il Cigno it’s mix among creativity and tradition.
Andrea Castelli’s carrer develops also in some of the most prestigious restaurants in the Riviera Ligure di Levante like the Yachting Club in Chiavari, the Restaurant Marina di Bardi in Zoagli, the Restaurant of the Hotel Splendido and the Restaurant Excelsior both in Portofino.
From the enchanted Bay of Portofino to a prestigious Island of Cozumel in Messico, Andrea Castelli will held the position of Executive Chef to the well known chain of Italian Restaurants “L’Alfredo Di Roma” in one of the best worlwide Hotel Chains (the Intercontinental Hotel (Cozumel Island Messico).
